- For one, look at our digestive tracts. They are built a certain way to allow us to digest wheat. Wheat is healthy. All this doctor is promoting is pseudo science and quackery.

I would like to know the standpoint on carbs in general. Whole food high carb food like rice, potatoes, sweet fruits, etc. - is the whole idea "no wheat and low GI"?

- I didn't realize all of this stuff. The vegans always tell you that I don't do that stuff but what are they no. Well I will have to think about this not buying bread anymore because it always goes bad on me anyway so goodbye the macaroni and cheese. I'll just eat the cheese.

- wow! i just started cutting out all wheat include whole oats, most dairy, and no sugar waters at first i felt craving sweets, breads, and couldnt sleep felt moody and depressed, i had acne too, now i feel great! im 40 yrs old look like late 20s early 30s no acne. really fit and muscular! really pple eat real food and love meat and fish/salmon some cheese for breakfast

- For all of you who are going wheat/ bread free, let me warn you - I did it too. I was free for 6 MONTHS! I have lupus and so many things changed for me. I lost weight, I was less moody, just everything was great - and then I had a slice of pizza. The way he teases about the "just one" is so true. I thought, I will have this slice of pizza and then go back to my wheat/ bread free way of living. WRONG! Even knowing and understanding what is happening, it has been so hard to get back off the bread. I tell people all the time that it is addictive. I never knew about the different proteins and such that make it so, I just knew that it was. I am working harder to get back off of it, but I really wish there was a rehab center for this particular addiction. Good luck to all of you on your wheat free journey.
- Davis makes a few errors. While Einkhorn is indeed the least reactive wheat, Davis claims Einkhorn, as the original wheat, was once very popular. However, this is false.

Davis is oblivious to the fact that Einkhorn was always a minor cereal even from the beginning of the Neolithic. Very few early cultures preferred Einkhorn (look it up). Cultures almost always preferred more reactive wheats for the simple fact that Einkhorn made a lousy bread and was mainly only good for making gruel and porridges.

More reactive wheats (Spelt, Farro, Emmer, Kamut, Graziella) were far more popular than Einkhorn as they made far better breads. Additionally, Kamut and Graziella are known to be far more reactive than modern wheat (Source: PMCID: PMC3354720).

What Davis does is compare modern wheat to the least reactive (and least popular) ancestor, Einkhorn, ignoring the fact that relatively very few humans ever ate Einkhorn. Not only that, but most early cultures preferred the more reactive wheats over Einkhorn (again, look it up).

Einkhorn is mainly useful for people who are sensitive to the more reactive wheats. There's no evidence from the historical record that the more reactive wheats were ever deleterious to the populations that ate them and it is overwhelmingly clear that cultures always preferred the more reactive wheats in their diet over Einkhorn.

With proper gut flora more reactive wheats are fine for most people. As a modern example: Pakistan, eats 70% of its calories from modern wheat and does not have the same health issue that Americans do. Therefore, it is clear that there is something else that is promoting wheat-related health issues. Davis seems oblivious to this.
