In this video I show the ENTIRE process of working with wheat, from seed, to plants, to processing, and finally, to baking bread. This is a simple, inexpensive way to grow your own wheat and make it into bread...BUT it takes an enormous amount of physical labor and time. This video took almost a yea.

- Breadmaking tip: AUTOLYSE !

Form a wet sponge with about 2/3 the flour and most of the water, cover, and let rest at room temp for 2-4 hrs, or overnight in fridge. During autolysis, and amalyse and protease present will begin scissoring up the long chain carbs and proteins, and develop the gluten without the need for excessive kneading. Then, add your remaining flour and your dry yeast, knead to form a loaf, and rise until doubled or tripled ... then bake. The autolysis does wonders for the flavor and texture, improves the gluten quality, and helps it leaven more easily and evenly.

BTW, Ive found thst a 50:50 mix of wholemeal flour and bread flour give the best breadmaking results.
